A Note on Safety, and on Honest Doubts

A Note on Safety, and on Honest Doubts

This volume has, at every turn, refused to let the romance of "ancestral" method eclipse the biology of safety — the botulinum spore in the low-acid jar, the E. coli in raw flour and raw milk, the true chemistry of why a cure keeps. Where a charming origin story could not be verified — the shepherd who "discovered" cheese in a stomach-pouch, the accidental first Roquefort — it has been labelled as legend, not fact. Craft deserves reverence; it does not deserve credulity. The honest maker holds both at once.
